Fans of exotic desserts will love this Purple Yam (Ube) Cookie! Ube has been used for desserts in Filipino culture for a long time–it's very time tested and taste approved. This vegetable is unique nutritionally in that it's very low on the glycemic index compared to other types of potatoes and sweet potatoes, meaning they won't have as strong an impact on your blood sugar levels. To celebrate Chinese New Year, we combined these amazing Ube cookies with traditional Chinese cakes, Nian Gao (年糕). It is a type of sweet rice cake made with palm sugar and glutinous rice flour, they are sweet and chewy. It is considered good luck to eat nian gao during Chinese New Year because nian gao (年糕) is a homonym for "higher year" or "grow every year" (年高), which means "a more prosperous year".
