Matcha Florentine Cookies
Florentine Cookies were created in France and named for the gold coins of Florence that were the standard currency of Europe for hundreds of years. They're crispy, slightly chewy, and have a buttery-caramel flavor. They are mostly made in circle shapes, and coated on the bottom with chocolate. But we made a slight change, we spread a gorgeous layer of caramelised toasted almond flakes on a bed of thin Matcha biscuits, instead of coating with chocolate, to reduce the sweetness and taste even better!
Tradition Palmiers is rolled with sugar, we would like to bring something interesting! We rolled them with a hint of Matcha to balance out the butteriness from the puff pastry. Palmiers are our All-time Favourite! The crunch of the sugar with the crunch of the pastry, and the way the flaky, buttery layers practically melt on the tongue. It feels so fancy to put them on a cookie tray for a spot of afternoon tea.
